Hot on the heels of Vermell’s 2024 Guia Repsol award, Vestige Son Vell’s Executive Chef Joan Bagur unveils a new seasonal menu that reflects his deep respect for local ingredients, traditional flavours and time-honoured techniques, reimagined with a modern, global sensibility. With the island’s best ingredients at his fingertips, from just-caught seafood to artisan meats, Joan says he feels, “blessed to cook in a place where I can use the highest-quality produce at peak freshness.” As a UNESCO Biosphere Reserve, Menorca provides a sustainable bounty that aligns perfectly with Joan’s exacting standards and creative ambitions.

When asked about his favourite dishes, Joan admits, “It’s almost impossible to choose,” but highlights two starters: a fresh artichoke salad with orange hollandaise, orange gel and sprouts; and a red shrimp tartar with salad foam, pineapple and pink coral sauce. For mains, he recommends the free-range roasted suckling pig with apple purée, butter and cinnamon, or the Menorcan vermella sirloin served with a rosemary potato terrine and glazed shallot.

To experience the full depth and variety of the dishes on offer, you might wish to choose between the six- and eight-course degustation options. For a more laid-back evening, Bar Son Vell offers a menu of light bites and perfectly cooked burgers in a relaxed setting.
