REGENERATION AND SUSTAINABILITY
Once vital 18th-century agricultural properties, Son Ermità and Binidufà slowly fell into disuse. As part of an ambitious regeneration project, our sister properties have been revitalised for the modern era, to echo once more with light and laughter while the surrounding estate’s biodiversity thrives once more. We firmly believe travel can and should be a force for good.
BUILDING AND RESTORATION
As with all our projects, we reused materials where possible or sourced a local match, choosing natural materials such as stone, wood and lime plasters over manmade. As much as possible, we avoided using cement. Employing stonemasons and carpenters trained in traditional methods such as ashlar masonry, an ancient stone cutting technique dating back to ancient Greece, Egypt and Peru, and stone and mortar techniques, we were meticulous in preserving each building’s character. By staying true to the building’s original proportions, materials, colours, sense of space and surrounding landscape, we have created an intimate atmosphere, perfect for your indulgent escape in nature.
AMENITIES AND INTERIORS
From the artwork on the walls to the sofas you sink into, and the pampering bathroom products to the sheets you sleep on, every item in our hotels is carefully selected for beauty, form and function. We continue to partner with Rowse to bring you beauty products that are as good for the planet as they are for you.
ENVIRONMENT AND GARDENS
Situated in the wild north of the island, it was crucial for us to work in harmony with the surrounding land, blending seamlessly into nature and gently coexisting with our rugged surroundings. At Binidufà, we have planted a total of 250 trees, and at Son Ermità, 85, to include olives, almonds, carobs, persimmons, quinces, apricots and more. In addition, we have planted a significant number of Mediterranean shrubs, foliage, plants and flowers, including swathes of fragrant wild rosemary.
Everything we plant is a native species, adapted to the warm, dry conditions and carefully managed in order to promote biodiversity. Already populated with fruit orchards, fig trees and mature trees including a collection of thousand-year-old olive trees that guide guests through the estate, we are mindful of protecting precious water through an irrigation drip system. Not only do our trees attract birds, small animals and pollinating insects, they also do a wonderful job of creating shady, peaceful spaces for you to enjoy. The result is a back-to-nature experience with an effortless indoor-outdoor flow, crafted for the ultimate relaxation.

Likewise, our team comes mostly from the island and mainland Spain to ensure your experience is rooted in local culture and authenticity.
GASTRONOMY
Overseen by Executive Chef Joan Bagur, our culinary teams foster relationships with local farmers and fishers, growers and producers, to bring you the very best taste of Menorca. During the season, we also serve homegrown, organic fruit and vegetables from our own estate.
