For Joan, Mesura was conceived as a natural counterpoint to Brisa, the seafood-led, French-inspired restaurant at sister property Vestige Son Ermità. “When it came to designing the menus for Mesura, we wanted to create something that both complemented and contrasted with the rich seafood focus of Brisa,” he explains. “It was an opportunity to explore a different culinary language, a challenge that I relished, while staying true to our values.”
Those values run throughout Vestige and extend well beyond the plate. Local sourcing, respect for tradition and care for both people and planet are fundamental. Just as the hotel’s restoration engaged local artisans and materials to preserve original features, Mesura’s menus follow the same guiding principle: simplicity, executed with care.
“Creating a plant-forward, locally sourced menu might feel like a surprising choice,” says Joan, “but it aligns naturally with our philosophy of treading lightly on the planet. It’s about coherence—between what we cook and how we show up in the world—while still offering guests an indulgent and spoiling experience.”
Plant-forward feasts

There is something both precise and liberating about placing vegetables, fruits and dairy centre stage. Rather than treating plants as supporting characters, Mesura’s menu puts them firmly at the heart. “By making vegetables the unalloyed stars of the show, creativity shines through in every dish,” Joan notes. “Without ever compromising on flavour or form, but with the option to add meat or fish, our menu is a love letter to the island.”
While the focus is firmly on plants, Mesura’s flavours are anything but restrained. Subtle Arabic influences in the spice palette pay homage to Menorca’s nearly eight centuries of Arab rule, adding depth and nuance to each dish. “These are light menus, full of detail and flavour,” Joan explains. “They show that Menorca can offer boundary-pushing cuisine while continuing to support our local producers.”
A philosophy rooted in flavour, heritage and wellbeing
Joan’s approach to food is deeply personal. “Food is an indispensable part of our lives,” he says. “It should be heartfelt and soulful. We perform this vital act every day, so it should be enjoyed. I’m always drawn to ingredients that haven’t travelled far, and to recipes that are connected to the place they come from.”
That connection is also what led him to the kitchen in the first place. “There’s no tradition of cooks in my family,” he reflects. “I simply loved watching food being prepared and sharing family meals. I started studying other things, but eventually realised I wanted to be a chef. I never imagined I’d reach this point, but it’s something I’m incredibly proud of.”

For Joan, Mesura represents both a creative challenge and a personal evolution. “Like most Spaniards, I’m not a vegetarian,” he admits. “So this concept pushed me outside my comfort zone. But that’s what excites me. I want to show how animal protein can be an accompaniment rather than an expectation, and how plant-forward cooking can elevate the luxury hotel experience.”
The result is a menu that mirrors the light-filled, nature-connected space in which it is served. “I want guests to experience something different,” he says. “A menu that feels bright, fresh and deeply connected to where we are.”
